1 medium butternut squash (about 2 pounds), peeled and cubed

1 pound Italian sausage (sweet or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, chopped

2 stalks celery, chopped

4 cups vegetable or chicken broth

1 can (14.5 oz) diced tomatoes (with juices)

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon ground cumin

Salt and pepper, to taste

2 cups kale or spinach (optional)

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Prepare the Ingredients: Begin by peeling and cubing the butternut squash, and chop the carrots, celery, and onion. Mince the garlic.

    Cook the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon, and cook until browned and cooked through, about 5-7 minutes. Once done, remove it from the pot and set aside, leaving the rendered fat in the pot.

      Sauté Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté until the onion is translucent, about 4-5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: Stir in the cubed butternut squash, cooked sausage, diced tomatoes, and the broth. Add thyme, oregano, cumin, salt, and pepper. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low and cover the pot. Allow the soup to simmer for about 20-25 minutes, or until the butternut squash is tender when pierced with a fork.
