Easy Cheesy Broccoli and Rice Casserole

2 cups of fresh broccoli florets (steamed)

1 cup of long-grain white rice (uncooked)

3 cups of vegetable broth

1 cup of sharp cheddar cheese (shredded)

1 cup of cream of mushroom soup (or cream of chicken, if preferred)

1/2 cup of grated parmesan cheese

1/2 teaspoon of garlic powder

1/2 teaspoon of onion powder

1/2 teaspoon of black pepper

1/2 teaspoon of salt

1 tablespoon of olive oil

1/2 cup of breadcrumbs (optional, for topping)

1 tablespoon of fresh parsley (chopped, for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    Prepare the rice: In a medium-sized pot, bring the vegetable broth to a boil. Stir in the uncooked rice, reduce the heat to low, cover, and let it simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.

      Prepare the broccoli: While the rice is cooking, steam the broccoli florets until they are vibrant and tender, about 5-7 minutes. Drain and set aside.

        Mix the base: In a large mixing bowl, combine the cooked rice, steamed broccoli, cream of mushroom soup, garlic powder, onion powder, black pepper, and salt. Stir until all ingredients are fully incorporated.

          Add the cheese: Gradually fold in the shredded cheddar and half of the grated parmesan to the mixture, reserving the rest for topping.

            Assemble the casserole: Lightly grease a 9x13-inch baking dish with olive oil. Pour the broccoli and rice mixture into the dish, spreading it out evenly.

              Top it off: If using, sprinkle the breadcrumbs over the top for added crunch. Then, finish with the remaining parmesan cheese.

                Bake the casserole: Place it in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

                  Garnish and serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley and serve warm.
