1 can (15 oz) chickpeas, drained and rinsed

1 tbsp olive oil

1 tsp ground cumin

1 tsp smoked paprika

½ tsp garlic powder

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup red cabbage, thinly sliced

1 cup cherry tomatoes, halved

½ cup red onion, diced

Fresh cilantro for garnish

Lime wedges for serving

Avocado Lime Dressing:

1 ripe avocado

2 tbsp lime juice (about 1 lime)

2 tbsp Greek yogurt (or dairy-free alternative)

1 clove garlic, minced

Salt and pepper, to taste

Water, as needed for consistency

Instructions
 

Prepare the Chickpeas:

    - In a large skillet over medium heat, add olive oil. Once hot, add the drained chickpeas.

      - Sprinkle in cumin, smoked paprika, garlic powder, salt, and pepper. Stir and cook for about 5-7 minutes until chickpeas are slightly crispy and heated through. Set aside.

        Make the Avocado Lime Dressing:

          - In a blender or food processor, combine the ripe avocado, lime juice, Greek yogurt, minced garlic, salt, and pepper. Blend until smooth.

            - If the dressing is too thick, gradually add water until the desired consistency is reached. Taste and adjust seasoning if necessary.

              Warm the Tortillas:

                - In a separate dry skillet, warm the tortillas one at a time over medium-high heat for about 30 seconds on each side until pliable. Keep them warm in a clean kitchen towel.
