1 cup granulated sugar

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 cup unsalted butter, melted

1 cup buttermilk (or regular milk with 1 tablespoon vinegar)

2 large eggs

1 teaspoon vanilla extract

1/4 cup brown sugar (for topping)

1 tablespoon ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and 1 teaspoon of ground cinnamon until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the melted butter, buttermilk, eggs, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to over-mix; you want the batter to remain slightly lumpy.
