1 cup sweet corn kernels (fresh, frozen, or canned)

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup grated Parmesan cheese

2 large eggs

2 green onions, finely chopped

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Prepare the Zucchini: After grating the zucchini, place it in a clean dish towel or paper towel and squeeze out as much moisture as possible to prevent the fritters from becoming soggy.

    Mix the Ingredients: In a large mixing bowl, combine the drained zucchini, sweet corn, flour, Parmesan cheese, eggs, green onions, garlic powder, paprika, salt, and pepper. Stir until well combined and a thick batter forms.

      Heat the Oil: In a large skillet, heat about 1-2 tablespoons of olive oil over medium heat. You want enough oil to cover the bottom of the skillet for even cooking.
