Easy Grilled Corn Salad

Ingredients
  

4 ears of fresh corn, husked

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Feta cheese (optional for topping)

Instructions
 

Preheat your grill to medium-high heat.

    Place the husked corn on the grill and cook, turning occasionally, until the kernels are slightly charred and tender, about 10-15 minutes.

      Remove the corn from the grill and let it cool slightly. Once cool enough to handle, use a sharp knife to cut the kernels off the cob and transfer them to a large mixing bowl.

        In the same bowl, add the diced red bell pepper, chopped red onion, halved cherry tomatoes, diced avocado, and fresh cilantro.

          In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper.

            Pour the dressing over the corn and vegetable mixture, then toss gently to combine, being careful not to mash the avocado.

              Taste and adjust the seasoning, adding more salt, pepper, or lime juice as desired.

                If using, crumble feta cheese on top before serving.

                  Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld or serve immediately if desired.
