Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

For the Chicken Skewers:

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon lime juice

2 cloves garlic, minced

1 tablespoon brown sugar

1 teaspoon ground coriander

1 teaspoon ground cumin

1 teaspoon turmeric

1 tablespoon vegetable oil

8-10 bamboo skewers (soaked in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

3 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon honey or maple syrup

1 teaspoon sriracha or chili paste (adjust to taste)

1/2 cup coconut milk

1 teaspoon minced garlic

Chopped peanuts, cilantro, and lime wedges for serving

Instructions
 

Marinate the Chicken: In a large bowl, whisk together soy sauce, fish sauce, lime juice, minced garlic, brown sugar, ground coriander, ground cumin, turmeric, and vegetable oil. Add the chicken pieces and toss until well coated. Cover and let marinate for at least 30 minutes (or up to 4 hours in the refrigerator).

    Prepare the Peanut Sauce: In a medium bowl, combine peanut butter, soy sauce, lime juice, honey, sriracha, coconut milk, and minced garlic. Whisk until smooth and creamy. Adjust seasoning to taste, adding more lime juice or spice if desired. Set aside.

      Skewer the Chicken: Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto the soaked bamboo skewers, packing them closely but not too tight to ensure even cooking.

        Grill the Skewers: Place the chicken skewers on the hot grill and cook for about 5-7 minutes per side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

          Serve: Once cooked, remove the skewers from the grill and let them rest for a few minutes. Serve the chicken skewers hot, drizzled with peanut sauce and garnished with chopped peanuts and cilantro. Add lime wedges on the side for an extra zing!
