Ingredients

1 cup natural peanut butter (creamy or chunky, your choice)

1/4 cup honey or maple syrup

1/4 cup powdered sugar or coconut sugar (adjust for sweetness)

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (dairy-free if needed)

1 tablespoon coconut oil (for melting chocolate)

A pinch of sea salt (optional, for topping)

Instructions

Prepare the Peanut Butter Mixture: In a mixing bowl, combine the peanut butter, honey (or maple syrup), powdered sugar, and vanilla extract. Mix well until the ingredients are thoroughly blended and form a smooth dough-like consistency.

Shape the Eggs: Using your hands, scoop a tablespoon of the peanut butter mixture and roll it into an egg shape or press it into an egg-shaped mold for uniformity. Place the formed eggs on a baking sheet lined with parchment paper. Repeat this process until all the mixture is shaped.

Chill the Eggs: Once you've shaped all the eggs, place the baking sheet in the freezer for about 30 minutes to firm up.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

Coat the Eggs: Remove the peanut butter eggs from the freezer. Carefully dip each egg into the melted chocolate using a fork, ensuring they are thoroughly coated. Allow any excess chocolate to drip off before placing them back onto the parchment-lined sheet.

Chill Again: Once all the eggs are coated, return them to the freezer for another 15-20 minutes until the chocolate has set.

Serve: After the chocolate has set, sprinkle a pinch of sea salt on top of each egg for an extra flavor boost (optional). Serve them chilled or at room temperature for a delightful snack!

Storage: Store any leftovers in an airtight container in the fridge for up to a week or in the freezer for longer-lasting enjoyment.
