Ingredients

4 salmon fillets (6 oz each)

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

Juice of 1 lemon

1 cup heavy cream

1/4 cup grated Parmesan cheese

2 cups fresh spinach

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Prepare the Salmon: In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt, pepper, paprika, thyme, and oregano on both sides.

Sear the Salmon: Once the oil is hot, gently place the salmon fillets in the skillet, skin-side down. Sear for about 3-4 minutes until the skin is crispy, then flip the salmon and cook for an additional 2 minutes.

Add Garlic: Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.

Make the Sauce: Pour the lemon juice over the salmon, then add the heavy cream. Stir to combine and allow it to simmer for 2-3 minutes. Gradually whisk in the Parmesan cheese until the sauce is smooth and creamy.

Add Spinach: Incorporate the fresh spinach into the sauce, cooking until wilted and tender, about 2 minutes.

Bake it: Transfer the skillet to the preheated oven. Bake for 10-12 minutes, or until the salmon is opaque and flakes easily with a fork.

Serve: Remove from the oven and garnish with chopped parsley and lemon slices. Serve immediately over rice, quinoa, or a bed of greens for a delicious meal.
