Easy Mediterranean Chickpea Salad Wraps

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

1/4 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled (optional)

2 tablespoons fresh parsley, chopped

2 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

4 large whole wheat wraps or pita bread

Hummus (for spreading, optional)

Instructions
 

In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.

    In a separate small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to create a dressing.

      Pour the dressing over the chickpea mixture and gently combine until everything is evenly coated.

        Lay out the wraps or pita bread on a clean surface. If using hummus, spread a generous layer on each wrap.

          Spoon the Mediterranean chickpea salad mixture onto the center of each wrap, dividing it equally among them.

            Fold in the sides of the wrap and carefully roll from the bottom up to secure the filling.

              Slice the wraps in half or enjoy them whole. Serve immediately or wrap tightly in foil for a meal on the go.
