12 oz (340g) spaghetti or linguine

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, diced

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), sliced

1 medium zucchini, sliced

1 cup broccoli florets

1 cup baby spinach

1 teaspoon dried oregano

Salt and pepper, to taste

Zest of 1 lemon

Juice of 1 lemon

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Prepare your ingredients: Gather all the vegetables and chop them as specified. This will make the cooking process smoother.

    Sauté aromatics: In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion. Sauté until the onion is translucent and fragrant, about 3-4 minutes.

      Add vegetables: Toss in the cherry tomatoes, bell pepper, zucchini, and broccoli. Sauté for another 5-6 minutes until the veggies are tender but still vibrant.

        Cook the pasta: Add the uncooked spaghetti or linguine to the pot. Pour in enough water to just cover the pasta (about 4-5 cups). Season with salt, pepper, and oregano. Stir well and bring to a boil.

          Simmer: Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer for 8-10 minutes, stirring occasionally, until the pasta is cooked al dente and most of the liquid has been absorbed.
