Easy One-Pot Spaghetti with Spinach and Peas

10 oz (280g) spaghetti

3 cups fresh spinach, roughly chopped

1 cup frozen peas

4 cups vegetable broth

2 cloves garlic, minced

1 small onion, finely diced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

½ cup grated Parmesan cheese (optional, for serving)

Fresh basil leaves, for garnish

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

    Add the Spices: Stir in the dried oregano, dried basil, and red pepper flakes (if using). Cook for another minute until fragrant.

      Incorporate the Spaghetti: Add the uncooked spaghetti to the pot, followed by the vegetable broth. Ensure the spaghetti is submerged in the liquid.

        Bring to a Boil: Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to a simmer. Cover the pot and cook for about 9-11 minutes, stirring occasionally, until the spaghetti is al dente.

          Stir in Spinach and Peas: Once the spaghetti is cooked, stir in the chopped spinach and frozen peas. Cook for an additional 2-3 minutes until the spinach wilts and the peas are heated through.

            Season to Taste: Remove the pot from heat. Season with salt and pepper to taste.
