20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 egg, lightly beaten

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: In a large pot of boiling salted water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, beaten egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

        Fill the Shells: Carefully fill each cooked pasta shell with the spinach and ricotta mixture. Use a spoon or a piping bag for easier filling.

          Prepare the Baking Dish: Spread 1 cup of marinara sauce evenly at the bottom of a 9x13 inch baking dish.
