Easy Sweet Potato and Spinach Casserole

2 large sweet potatoes, peeled and cubed

4 cups fresh spinach, roughly chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon nutmeg

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 teaspoon dried oregano

1/4 cup milk (or plant-based alternative)

1/2 cup breadcrumbs (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Sweet Potatoes: In a large pot, bring salted water to a boil. Add the cubed sweet potatoes and cook for about 10-12 minutes or until tender. Drain and let them cool slightly.

      Sauté Spinach: In a skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat.

        Mix Ingredients: In a large mixing bowl, combine the cooked sweet potatoes, sautéed spinach, ricotta cheese, half the mozzarella cheese, Parmesan cheese, nutmeg, salt, black pepper, oregano, and milk. Mix well until everything is fully incorporated.

          Assemble the Casserole: Transfer the mixture to a greased 9x13-inch baking dish. Spread it evenly. Top with the remaining mozzarella cheese and, if using, sprinkle with breadcrumbs for a crunchy topping.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
