Ingredients
  

14 oz firm tofu, drained and pressed

2 cups broccoli florets

1 red bell pepper, sliced

1 cup snap peas

3 cloves garlic, minced

1 inch ginger, grated

2 tbsp vegetable oil

1/4 cup teriyaki sauce

2 cups cooked jasmine rice

1 tbsp sesame seeds (for garnish)

2 green onions, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Prepare the Tofu:

    - Cut the pressed tofu into bite-sized cubes. Pat dry with a paper towel to remove excess moisture.

      Cook the Tofu:

        - In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu cubes and cook for 5-7 minutes, turning occasionally, until golden brown on all sides. Season with a pinch of salt and pepper. Once cooked, transfer the tofu to a plate and set aside.

          Stir-Fry Vegetables:

            - In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and grated ginger, frying for about 30 seconds until fragrant.

              - Add the broccoli, red bell pepper, and snap peas. Stir-fry for about 4-5 minutes or until the vegetables are bright and tender but still crisp.

                Combine Tofu and Sauce:

                  - Return the cooked tofu to the skillet with the vegetables. Pour the teriyaki sauce over the mixture and gently toss to combine everything, cooking for another 2 minutes to heat through and coat the ingredients in sauce.

                    Serve:

                      - Serve the stir-fry over a bed of fluffy jasmine rice. Sprinkle sesame seeds and chopped green onions on top for garnish. Enjoy your delicious and easy teriyaki tofu stir-fry!
