Easy Tomato Basil Tart

1 sheet of puff pastry, thawed

3 large tomatoes, sliced (preferably heirloom or vine-ripened)

1 cup fresh basil leaves, packed

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

2 tablespoons olive oil

1 teaspoon balsamic vinegar

1 teaspoon garlic powder

Salt and pepper, to taste

1 egg, beaten (for egg wash)

Optional: A sprinkle of red pepper flakes for heat

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Puff Pastry: Roll out the puff pastry on a lightly floured surface until it’s about 1/4 inch thick. Transfer it to a parchment-lined baking sheet, pressing into the corners to fit.

      Create the Crust: Using a sharp knife, score a border about 1 inch from the edge of the pastry (this will create a border that rises). Prick the center with a fork to prevent it from puffing up too much during baking.

        Mix Cheeses: In a medium bowl, combine the ricotta cheese, half of the mozzarella, olive oil, garlic powder, salt, and pepper. Stir until smooth.

          Assembly: Spread the cheese mixture evenly over the center of the puff pastry, staying within the scored border. Layer the tomato slices on top of the cheese, slightly overlapping them. Drizzle balsamic vinegar over the tomatoes and sprinkle the remaining mozzarella on top. Finish with fresh basil leaves.

            Egg Wash: Brush the outer border of the pastry with the beaten egg to give it a nice golden color when baked.

              Bake the Tart: Place the tart in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and the cheese is bubbly.
