Ingredients

2 tablespoons vegetable oil

3 cloves garlic, minced

1 medium onion, sliced

1 cup bell peppers (red, green, and yellow), sliced

1 cup broccoli florets

1 cup snap peas

1 medium carrot, julienned

1 cup mushrooms, sliced

3 tablespoons soy sauce (low sodium recommended)

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons water (if using cornstarch)

Salt and pepper to taste

Toasted sesame seeds for garnish

Green onions, sliced, for garnish

Instructions

Prepare the Sauce: In a small bowl, combine soy sauce, honey (or maple syrup), sesame oil, and cornstarch (if you prefer a thicker sauce). Add water to the mixture and stir until smooth. Set aside.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.

Sauté Aromatics: Add minced garlic and sliced onion to the hot oil. Sauté for about 2 minutes until fragrant and the onions start to become translucent.

Add Vegetables: Stir in the bell peppers, broccoli, snap peas, carrot, and mushrooms. Cook for 5-7 minutes, stirring frequently, until the vegetables are tender but still crisp.

Pour the Sauce: Once the vegetables are cooked, pour the garlic soy sauce over the stir-fried veggies. Stir well to coat everything evenly. If using cornstarch, let it cook for another minute or two until the sauce thickens.

Season to Taste: Add salt and pepper as needed. Cook for an additional minute to ensure everything is heated through.

Garnish and Serve: Remove from heat and garnish with toasted sesame seeds and sliced green onions. Serve hot over steamed rice, quinoa, or your choice of grain.
