14 oz (400g) firm tofu, pressed and cubed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 bell pepper, sliced (any color)

1 cup broccoli florets

1 zucchini, sliced into half-moons

1 carrot, julienned

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

3 green onions, chopped

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Prepare the Tofu: Begin by pressing the tofu to remove excess moisture. Wrap it in a clean kitchen towel or paper towels and place a heavy object on top for about 15-20 minutes. Once pressed, cut the tofu into bite-sized cubes.

    Marinate the Tofu: In a medium bowl, combine the cubed tofu, 1 tablespoon of soy sauce, and 1 tablespoon of sesame oil. Gently toss to coat the tofu evenly and let it marinate while you prepare the vegetables.

      Heat the Oils: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the marinated tofu cubes. Cook for about 5-7 minutes, turning occasionally, until they are golden brown on all sides. Remove the tofu from the pan and set aside.

        Sauté the Vegetables: In the same pan, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Then, add the sliced bell pepper, broccoli florets, zucchini, and julienned carrot. Stir-fry for 5-7 minutes, or until the veggies are tender-crisp.

          Combine Everything: Return the cooked tofu to the skillet with the vegetables. Add the remaining 1 tablespoon of soy sauce, hoisin sauce, and rice vinegar. Toss everything together and stir-fry for an additional minute to heat through and blend the flavors.

            Garnish and Serve: Remove the stir-fry from heat. Garnish with chopped green onions and a sprinkle of sesame seeds. Serve the stir-fry warm over cooked rice or quinoa.
