Easy Veggie Stir-Fry with Peanut Sauce

2 cups mixed bell peppers (red, yellow, and green), sliced

1 cup broccoli florets

1 cup snap peas, trimmed

1 cup carrots, julienned

1 cup button mushrooms, sliced

3 tablespoons sesame oil (divided)

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

¼ cup soy sauce (or tamari for gluten-free)

2 tablespoons rice vinegar

2 tablespoons brown sugar

½ cup creamy peanut butter

1 tablespoon sriracha (adjust to taste)

¼ cup water (add more for desired consistency)

Chopped green onions and crushed peanuts for garnish

Instructions
 

Prepare the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, brown sugar, sriracha, and water until smooth. Set aside.

    Heat the Oil: In a large wok or skillet, heat 1 tablespoon of sesame oil over medium-high heat.

      Sauté Aromatics: Add the minced garlic and ginger to the hot oil and sauté for about 30 seconds until fragrant.

        Add Vegetables: Toss in the sliced bell peppers, broccoli florets, snap peas, carrots, and mushrooms. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp and vibrant in color.

          Combine Sauce and Veggies: Reduce heat to medium and pour the prepared peanut sauce over the vegetables. Stir well to coat the veggies evenly. If the sauce is too thick for your liking, add a little more water until desired consistency is reached.

            Finish with Oil: Drizzle the remaining 2 tablespoons of sesame oil over the stir-fry and give it a final toss to combine all the flavors.

              Serve: Transfer the stir-fry to serving plates and garnish with chopped green onions and crushed peanuts for an extra crunch.
