3 medium zucchinis, spiralized or finely chopped

8 oz (225 g) pasta (penne or fusilli works great)

1 cup marinara sauce

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 clove garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Pasta: Cook the pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Zucchini: In a large skillet, add a splash of olive oil over medium heat. Add the spiralized or chopped zucchini and sauté for 3-4 minutes until they begin to soften. Season with salt, pepper, and Italian seasoning. Remove from heat.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta, sautéed zucchini, marinara sauce, ricotta cheese, and half of the mozzarella cheese. Mix well to ensure everything is evenly coated.
