Egg and Chili Breakfast Casserole

8 large eggs

1 cup milk (or dairy-free equivalent)

1 cup shredded cheddar cheese

1 can (15 oz) black beans, drained and rinsed

1 cup diced bell peppers (red, green, yellow)

1 small onion, finely chopped

1-2 fresh jalapeños, diced (adjust to taste)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

Salt and pepper, to taste

2 cups frozen hash browns

Fresh cilantro, for garnish

Avocado slices, for serving (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch casserole dish with cooking spray or olive oil.

    Sauté the Vegetables: In a large skillet over medium heat, add a splash of oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent. Add the diced bell peppers and jalapeños, cooking for an additional 3-5 minutes until softened. Remove from heat and set aside.

      Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, cumin, smoked paprika, garlic powder, salt, and pepper until well combined.

        Layer the Casserole: In your greased casserole dish, evenly spread the frozen hash browns at the bottom. Next, sprinkle the sautéed vegetable mixture over the hash browns, followed by the black beans. Pour the egg mixture over the top, gently tilting the dish to ensure even distribution.

          Add Cheese: Sprinkle the shredded cheddar cheese evenly over the entire casserole.

            Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the eggs are fully set and the top is golden brown.

              Cool and Serve: Once baked, let the casserole cool for about 5-10 minutes before slicing. Top with fresh cilantro and serve slices with avocado on the side if desired.
