Ingredients

4 boneless, skinless chicken breasts

1 (10.5 oz) can cream of chicken soup

2 cups chicken broth

1 package (12 oz) stuffing mix (preferably herbed)

1 medium onion, diced

2 celery stalks, diced

1/2 cup fresh cranberries (or dried cranberries)

1 teaspoon dried thyme

1 teaspoon dried sage

Salt and black pepper to taste

4 tablespoons unsalted butter, melted

Fresh parsley for garnish (optional)

Instructions

Prepare the Chicken: Season the chicken breasts with salt, black pepper, thyme, and sage. Place them at the bottom of the crockpot.

Sauté the Veggies: In a skillet, melt 2 tablespoons of butter over medium heat. Add the diced onion and celery, and sauté until they become translucent, about 5 minutes. Stir in the cranberries and cook for an additional minute.

Mix the Sauce: In a bowl, combine the cream of chicken soup with the chicken broth. Pour this mixture over the seasoned chicken breasts.

Prepare the Stuffing: In a separate bowl, mix the stuffing mix with the sautéed onion, celery, cranberries, and the remaining melted butter. Stir well to combine.

Layer the Stuffing: Spoon the stuffing mixture evenly over the chicken in the crockpot.

Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and offers no resistance when shredded with a fork.

Serve: Once cooked, gently fluff the stuffing and serve the chicken with a scoop of stuffing on the side. Garnish with fresh chopped parsley if desired.

Enjoy: Dig into this comforting fall dish, which is perfect for cozy nights!
