Fall Crockpot Mac with Broccoli

1 pound elbow macaroni

4 cups broccoli florets (fresh or frozen)

4 cups vegetable broth

1 cup whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon mustard powder

Salt and pepper to taste

1/4 cup grated Parmesan cheese (for topping)

Fresh parsley for garnish (optional)

Prepare the Crockpot: Spray the inside of your crockpot with non-stick cooking spray to ensure easy cleanup.

    Cook Pasta: Add the elbow macaroni to the crockpot followed by the vegetable broth and all of the seasonings: garlic powder, onion powder, smoked paprika, mustard powder, salt, and pepper. Stir to combine.

      Add Broccoli: Gently fold in the broccoli florets, making sure they are evenly distributed throughout the pasta.

        Combine Dairy: In a separate bowl, combine the whole milk, shredded cheddar cheese, and shredded mozzarella cheese. Mix well until fully incorporated.

          Combine Everything: Pour the cheese mixture over the pasta and broccoli in the crockpot. Stir well to ensure that all ingredients are mixed.

            Cook It Up: Cover the crockpot with the lid and cook on low for about 2-3 hours, or until the pasta is tender and creamy. Stir occasionally, ensuring nothing sticks to the sides.
