Ingredients

1 pound of smoked sausage (kielbasa or andouille), sliced into rounds

1.5 pounds of baby potatoes, halved (or quartered if large)

1 medium onion, chopped

4 cloves of garlic, minced

1 cup of vegetable broth (or chicken broth)

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon dried rosemary

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

2 cups of kale or spinach, roughly chopped (optional, for added greens)

2 tablespoons of olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prep the Ingredients: Begin by washing and halving the baby potatoes. Chop the onion, mince the garlic, and slice the sausage into bite-sized rounds.

Layer the Crockpot: In the crockpot, add the halved potatoes evenly at the bottom, followed by the chopped onions, minced garlic, and then the sausage.

Season the Dish: Sprinkle paprika, thyme, rosemary, black pepper, and salt over the ingredients in the crockpot. Give it a gentle toss to evenly distribute the seasonings.

Add Liquid: Pour the vegetable or chicken broth over the entire mixture to ensure everything is partially submerged, which will keep the dish moist as it cooks.

Set the Crockpot: Cover and set your crockpot to low and let it cook for 6–8 hours, or on high for 3–4 hours. Stir halfway through if possible.

Add Greens (Optional): About 30 minutes before serving, if you choose to add them, stir in the chopped kale or spinach for a burst of color and nutrients.

Final Touches: Once cooked, taste and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley on top.

Serve and Enjoy: Ladle the hearty sausage and potatoes into bowls and enjoy this warm, cozy meal!
