Once you have mixed your base ingredients of chickpeas, cucumber, and red onion, it’s time to elevate your salad with feta cheese and fresh parsley. Feta cheese adds a creamy, tangy flavor that perfectly complements the crispness of the cucumbers and the heartiness of the chickpeas. When selecting feta cheese, it’s crucial to choose a high-quality option for the best taste. Opt for feta that is packed in brine or oil; this ensures optimal freshness and flavor. Look for brands that are made from sheep's milk or a sheep-goat milk blend for a richer taste.

Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

1 teaspoon dried oregano

Salt and pepper, to taste

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, and finely chopped red onion. Toss them gently to mix.

Add Chickpeas: Fold in the rinsed and drained chickpeas, ensuring they are evenly distributed among the vegetables.

Incorporate Feta and Parsley: Gently add the crumbled feta cheese and chopped parsley. Be careful not to mash the feta; you want it to retain its shape.

Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper to create a flavorful dressing.

Combine and Chill: Pour the dressing over the salad and mix carefully until all ingredients are well-coated. Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

Serve: Before serving, give the salad a final toss, taste, and adjust seasoning if needed. Serve chilled as a refreshing side dish or a light meal.
