Zoodles are exactly what they sound like: noodles made from zucchini. The term 'zoodle' is a portmanteau of 'zucchini' and 'noodle,' and it refers to the process of spiralizing zucchini into noodle-like shapes. This culinary trend has its roots in the growing awareness of healthy eating habits and the desire to find low-carb alternatives to traditional pasta. By replacing high-carb pasta with zoodles, many individuals are able to enjoy their favorite dishes while significantly reducing their carbohydrate intake.

Ingredients

3 medium zucchinis, spiralized

1 pint cherry tomatoes, halved

1 cup crumbled feta cheese

1/4 cup red onion, finely diced

1/4 cup kalamata olives, pitted and sliced

1/4 cup fresh basil leaves, chopped

3 tablespoons extra-virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon honey

Salt and pepper to taste

Instructions

Spiralize the Zucchini: Use a spiralizer to create zoodles from the zucchinis and place them in a large salad bowl.

Prepare the Veggies: Add the halved cherry tomatoes, diced red onion, sliced kalamata olives, and chopped fresh basil to the bowl with zoodles.

Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper until well combined.

Combine: Pour the dressing over the zucchini and tomato mixture, gently tossing everything together until the zoodles are evenly coated.

Add Feta: Sprinkle the crumbled feta cheese over the top and give it a light toss to combine.

Chill & Serve: Let the salad sit for about 10 minutes to allow the flavors to meld before serving. Enjoy fresh, or serve over a bed of mixed greens for an added crunch.
