12 oz (340g) rigatoni or penne pasta

1 cup fig jam (preferably homemade or high-quality store-bought)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 cup fresh spinach, roughly chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon fresh lemon zest

½ teaspoon red pepper flakes (optional, for a kick)

Salt and pepper, to taste

¼ cup chopped walnuts (optional, for crunch)

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the rigatoni or penne and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Cheese Mixture: In a large mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, grated Parmesan, chopped spinach, minced garlic, thyme, lemon zest, and red pepper flakes (if using). Mix well until all ingredients are fully incorporated. Season with salt and pepper to taste.

        Combine Pasta and Cheese Mixture: Add the cooked pasta to the cheese mixture. Gently fold in the fig jam until evenly distributed. Stir in the chopped walnuts if you are using them for added texture.

          Assemble the Bake: Transfer the pasta mixture into a greased 9x13 inch (23x33 cm) baking dish. Make sure to spread it evenly. Top with the remaining shredded mozzarella cheese.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
