1 teaspoon sriracha (adjust to taste)

2-4 tablespoons water (to thin the sauce)

For the Noodle Bowl:

8 ounces rice noodles (or your favorite noodles)

1 cup shredded carrots

1 red bell pepper, thinly sliced

1 cup snap peas, trimmed

1/2 cup red cabbage, finely shredded

1/4 cup green onions, chopped

1/4 cup chopped cilantro (optional)

1 tablespoon sesame seeds (for garnish)

Lime wedges (for serving)

Prepare the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, honey or maple syrup, rice vinegar, sesame oil, grated ginger, minced garlic, and sriracha. Gradually add water until you reach a smooth consistency that’s easy to pour. Set aside.

    Cook the Noodles: Bring a large pot of water to boil. Add the rice noodles and cook according to package instructions until al dente, usually around 4-6 minutes. Drain the noodles and rinse them under cold water to prevent sticking.

      Sauté the Vegetables: In a large skillet or wok over medium heat, add a drizzle of vegetable oil. Add the shredded carrots, sliced red bell pepper, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp. Remove from heat.

        Combine Everything: In a large mixing bowl, combine the cooked noodles and sautéed vegetables. Pour the prepared peanut sauce over the top and toss everything together until well coated.
