1 cup almond milk (or milk of choice)

½ cup all-purpose flour

½ cup whole wheat flour

½ cup brown sugar (packed)

1 tbsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ cup unsweetened applesauce

2 large eggs

½ cup vegetable oil (or melted coconut oil)

1 tsp vanilla extract

1 cup fresh or frozen blueberries

Optional: Zest of 1 lemon for extra flavor

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease them with cooking spray.

    Mix the Oats and Milk: In a medium bowl, combine the rolled oats and almond milk. Let it sit for about 10 minutes to allow the oats to soften.

      Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, salt, and cinnamon.

        Blend Wet Ingredients: In another bowl, mix the applesauce, eggs, vegetable oil, and vanilla extract until well combined. If you're using lemon zest, add it to this mixture.

          Combine Mixtures: Pour the oat and milk mixture into the wet ingredients. Stir to combine, then gradually fold in the dry ingredients until just combined. Be careful not to overmix!
