2 stalks lemongrass, trimmed and smashed

1 onion, halved

4 slices fresh ginger

6 cloves garlic, smashed

1 cinnamon stick

4 star anise pods

2 tsp coriander seeds

8 cups chicken broth

1 tablespoon fish sauce

Salt to taste

For the Chicken:

1 lb boneless, skinless chicken thighs

1 tablespoon vegetable oil

1 tsp salt

For Serving:

8 oz rice noodles

Fresh herbs (basil, cilantro, mint)

2-3 green onions, sliced

Lime wedges

Sliced jalapeños (optional)

Bean sprouts (optional)

Instructions
 

Prepare the Broth:

    - In a large pot, combine the smashed lemongrass, onion, ginger, garlic, cinnamon stick, star anise, coriander seeds, and chicken broth. Bring to a boil over medium-high heat.

      - Reduce the heat to low and simmer for about 30 minutes to allow the flavors to meld.

        Cook the Chicken:

          - While the broth is simmering, season the chicken thighs with salt. In a skillet, heat the vegetable oil over medium-high heat. Cook the chicken for about 5-7 minutes on each side until golden brown and cooked through. Remove from heat, let cool slightly, then shred the chicken.

            Strain the Broth:

              - After 30 minutes of simmering, strain the broth through a fine mesh sieve to remove the solids, discarding them. Return the liquid to the pot and stir in the fish sauce. Taste and adjust the seasoning with salt if needed.

                Cook the Rice Noodles:

                  - In a separate pot, cook the rice noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process.

                    Assemble the Pho:

                      - Place a portion of cooked rice noodles in the bottom of each serving bowl. Top with shredded chicken. Ladle the hot broth over the noodles and chicken until the bowls are full.

                        Garnish:

                          - Serve the pho with fresh herbs, green onions, lime wedges, and sliced jalapeños on the side. Optionally, add a handful of bean sprouts for extra crunch.
