4 large portobello mushrooms, stems removed

2 cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, roughly chopped

2 tablespoons balsamic glaze

3 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

¼ teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Portobellos: Wipe the portobello mushrooms with a damp cloth to clean them. Arrange them on a baking sheet, gill side facing up. Drizzle 2 tablespoons of olive oil over the mushrooms and season with salt and pepper.

      Make the Filling: In a medium bowl, combine the halved cherry tomatoes, mozzarella balls, chopped basil, minced garlic, balsamic glaze, and the remaining tablespoon of olive oil. Mix gently to combine so the mozzarella doesn't fall apart.

        Stuff the Mushrooms: Generously spoon the Caprese mixture into each portobello, piling it up high. Drizzle with a little more balsamic glaze, and if you like a bit of heat, sprinkle with red pepper flakes.

          Bake: Place the baking sheet in the oven and bake for 20-25 minutes, or until the mushrooms are tender and the cheese is melting and bubbly.

            Garnish & Serve: Remove the stuffed mushrooms from the oven and let them cool slightly. Garnish with additional fresh basil leaves and serve warm.
