Ripe bananas are the star of the show in this recipe. Not only do they provide natural sweetness, but they are also a powerhouse of nutrition. Rich in potassium, bananas help regulate blood pressure and support heart health. Their high fiber content aids digestion and promotes a feeling of fullness, making them an excellent choice for a healthy snack. In this recipe, ripe bananas serve as the natural binder, holding all the ingredients together while enhancing the overall sweetness of the bites. Selecting perfectly ripe bananas is crucial; look for those that are speckled with brown spots, as these will provide the best flavor and texture.

Ingredients

2 ripe bananas

1 cup rolled oats

1/2 cup almond butter (or any nut butter of choice)

1 teaspoon ground cinnamon

1 tablespoon honey or maple syrup (optional for sweetness)

1/4 cup chopped nuts (like walnuts or pecans, optional)

1/4 cup dark chocolate chips (optional)

A pinch of sea salt

Instructions

Prep Bananas: Start by peeling the ripe bananas and placing them in a mixing bowl. Use a fork to mash them until they are smooth with just a few lumps remaining.

Combine Ingredients: Add the rolled oats, almond butter, ground cinnamon, and any optional ingredients (honey, chopped nuts, chocolate chips, and sea salt) to the mashed bananas. Mix thoroughly until all ingredients are well combined.

Shape the Mixture: Using your hands, scoop out tablespoon-sized portions of the mixture and roll them into bite-sized balls. You can make them as small or large as you prefer, but keeping them uniform in size helps with even freezing.

Prepare for Freezing: Line a baking sheet with parchment paper. Place each rolled bite onto the parchment, making sure they don’t touch each other to prevent sticking.

Freeze: Once all bites are arranged, place the baking sheet in the freezer for about 2 hours, or until the bites are fully frozen.

Store: After freezing, transfer the bites into an airtight container or a resealable bag. They can be kept in the freezer for up to a month.

Serve: When you’re ready to enjoy, simply take a few bites out of the freezer. They can be eaten straight from frozen for a refreshing snack or allowed to sit at room temperature for a few minutes for a softer texture.
