Ingredients

For the Cookies:

1 ½ cups rolled oats

1 cup ripe bananas (about 2-3 bananas)

1/3 cup almond butter (or peanut butter)

1 tsp vanilla extract

1/2 tsp baking powder

1/4 tsp cinnamon

1/4 tsp salt

1/3 cup dark chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

For the Banana Ice Cream Filling:

2 ripe bananas

1/2 cup plain Greek yogurt (or dairy-free alternative)

1 tsp vanilla extract

1-2 tbsp honey or maple syrup (adjust to taste)

Instructions

Prepare the Cookie Mixture:

    - In a large mixing bowl, mash the ripe bananas until smooth.

      - Add the almond butter, vanilla extract, baking powder, cinnamon, and salt. Mix until well combined.

        - Fold in the rolled oats, and if desired, add dark chocolate chips and nuts.

          Shape the Cookies:

            - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

              - Using a spoon, scoop out about 1 tablespoon of the cookie mixture and place it on the prepared baking sheet. Flatten each cookie slightly as they will not spread much while baking.

                - Repeat until the dough is used up, spacing the cookies about 2 inches apart.

                  Bake the Cookies:

                    - Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.

                      - Once baked, allow them to cool on a wire rack for about 10 minutes.

Make the Banana Ice Cream Filling:

                          - While the cookies are cooling, blend the ripe bananas, Greek yogurt, vanilla extract, and honey/maple syrup in a blender until you achieve a smooth consistency. You can also use a food processor.

                            Assemble the Sandwiches:

                              - Take one cookie and spread a generous tablespoon of the banana ice cream filling on the flat side. Top with another cookie, flat-side down, to create a sandwich.

                                - Repeat until all cookies are paired with filling.

                                  Freeze the Sandwiches:

                                    - Place the assembled cookie sandwiches on a baking sheet and put them in the freezer for at least 1-2 hours, or until firm.

                                      Serve and Enjoy:

                                        - Once frozen, serve immediately and enjoy your delightful Frozen Banana Oat Cookie Sandwiches! Store leftovers in an airtight container in the freezer for a quick snack.
