For the Cookies:

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/2 cup rolled oats

1/2 cup semisweet chocolate chips (optional)

For the Berry Yogurt Filling:

1 1/2 cups Greek yogurt (plain or vanilla)

1/2 cup mixed frozen berries (blueberries, raspberries, strawberries)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

Instructions
 

Prepare the Cookie Dough:

    - In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

      - In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.

        - Beat in the egg and vanilla extract until fully incorporated.

          - Gradually add the flour mixture to the wet ingredients, mixing until just combined. Stir in the oats and chocolate chips if using.

            Bake the Cookies:

              - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

                - Scoop out tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.

                  - Bake for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

                    Prepare the Berry Yogurt Filling:

                      - In a bowl, mix the Greek yogurt with honey (or maple syrup) and vanilla extract until smooth.

                        - Gently fold in the mixed frozen berries. If you desire a smoother filling, you can blend the berries into the yogurt mixture, but leaving them whole adds texture and bursts of flavor.

                          Assemble the Sandwiches:

                            - Once the cookies are completely cool, spread a generous tablespoon of the berry yogurt filling on the underside of one cookie. Top with another cookie to form a sandwich. Repeat until all cookies are used.

                              Freeze the Sandwiches:

                                - Place the assembled cookie sandwiches on a baking sheet lined with parchment paper and freeze for at least 1-2 hours until firm.
