Ingredients

1 cup grated carrots (fresh and finely grated)

1 cup full-fat coconut yogurt (unsweetened)

1 tablespoon honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional for extra warmth)

1/4 cup shredded unsweetened coconut

A pinch of sea salt

Optional toppings: Chopped nuts, dried fruits, chocolate chips

Instructions

Prepare the Carrots: Start by peeling and finely grating the fresh carrots using a box grater or a food processor. Set aside.

Mix the Yogurt: In a mixing bowl, combine the full-fat coconut yogurt, honey (or maple syrup), vanilla extract, ground cinnamon, nutmeg (if using), and sea salt. Stir until well combined.

Fold in Carrots: Gently fold in the grated carrots and shredded coconut with a spatula, ensuring that the carrots are evenly distributed within the yogurt mixture.

Mold the Coins: Line a baking sheet with parchment paper. Using a cookie scoop or spoon, drop the mixture in equal portions onto the lined sheet, forming small coin-shaped disks about 1-inch thick. Make sure they are spaced evenly apart.

Freeze: Place the baking sheet in the freezer for at least 4-6 hours or until the coins are completely solid.

Store: Once frozen, remove the coins from the parchment paper and transfer them to an airtight container or a zip-lock bag. Store in the freezer for up to 1 month.

Serve: When ready to enjoy, simply take out the desired number of coins and let them sit at room temperature for a couple of minutes before serving. Top with your choice of chopped nuts, dried fruits, or chocolate chips for an extra touch.
