Frozen Coconut Pineapple Bites

1 cup fresh pineapple chunks (frozen if desired)

1 cup unsweetened coconut yogurt (or regular yogurt)

1/2 cup shredded coconut (sweetened or unsweetened)

2 tablespoons honey or agave syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

Pinch of salt

Optional toppings: chopped nuts, dark chocolate chips, or extra shredded coconut

Instructions
 

Prepare the Pineapple: If using fresh pineapple, chop it into bite-sized chunks. If using frozen pineapple, let it thaw slightly for easier blending.

    Blend the Mixture: In a blender or food processor, combine the pineapple chunks, coconut yogurt, honey or agave syrup, vanilla extract, and a pinch of salt. Blend until smooth and creamy.

      Mix in Coconut: Gently fold in the shredded coconut with a spatula until evenly distributed throughout the mixture.

        Fill the Molds: Pour the mixture into silicone molds or an ice cube tray, filling each compartment about 3/4 full.

          Freeze: Place the trays in the freezer and allow them to freeze for at least 4 hours, or until completely solid.

            Unmold and Serve: Once frozen, carefully remove the bites from the molds. If they are difficult to release, briefly run warm water over the back of the molds for easier removal.
