1 cup coconut yogurt (unsweetened)

1/2 cup almond flour

1/4 cup coconut flour

1/4 cup maple syrup

1/4 cup shredded unsweetened coconut

1/2 tsp vanilla extract

1/2 tsp baking powder

Pinch of salt

Mix the Wet Ingredients: In a mixing bowl, combine the coconut yogurt, maple syrup, and vanilla extract. Whisk until smooth and fully incorporated.

    Combine Dry Ingredients: In a separate bowl, mix together the almond flour, coconut flour, shredded coconut, baking powder, and salt. Stir until well blended.

      Combine Both Mixtures: Slowly add the dry ingredients to the wet ingredients. Stir until a dough forms. If the mixture is too wet, add a tiny bit more coconut flour until it holds together but is still moist.

        Shape the Discs: Using your hands, take small portions of dough and roll them into balls. Gently flatten each ball into a disc shape about 1/2 inch thick. Place them on a parchment-lined baking sheet.
