Frozen Greek Yogurt Fruit Cups

2 cups plain Greek yogurt

1/4 cup honey or maple syrup

1 tsp vanilla extract

1 cup mixed fresh fruit (strawberries, blueberries, kiwi, or your choice)

1/2 cup granola (optional)

12 silicone cupcake liners or small plastic cups

Prepare the Fruit: Wash and chop the mixed fresh fruits into small bite-sized pieces. Set aside.

    Mix the Yogurt Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well combined.

      Combine Ingredients: Gently fold in the chopped fruit to the yogurt mixture. Make sure the fruit is evenly distributed. If using granola, reserve some for topping later.

        Fill the Cups: Spoon the yogurt and fruit mixture into the silicone cupcake liners or plastic cups until they are about three-quarters full. If you like, sprinkle a little granola on top of each cup for added crunch.

          Freeze: Place the filled cups in the freezer and allow them to freeze for at least 4-6 hours, or until solid.

            Serve: To enjoy, simply remove a few cups from the freezer and let them sit for about 5 minutes at room temperature to soften slightly. Pop the frozen yogurt fruit cups out of the liners and enjoy this refreshing treat!
