Ingredients

1 cup plain Greek yogurt

1/2 cup fresh raspberries (or thawed frozen raspberries)

1/4 cup honey or maple syrup

Zest of 1 large lemon

Juice of 1 large lemon

1 tsp vanilla extract

Pinch of salt

Optional: Garnish with additional raspberries, mint leaves, or lemon zest

Instructions

Prep the Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and a pinch of salt. Mix well until smooth and creamy.

Add Raspberries: Gently fold in the raspberries, being careful not to mash them completely. You want some pieces to remain intact for texture and flavor.

Prepare the Molds: Line a baking tray with parchment paper. Using a small cookie scoop or spoon, dollop the yogurt mixture onto the parchment paper, forming small coins about 1-2 inches in diameter. Leave a little space between them, as they will spread slightly when frozen.

Freeze Coin Shapes: Place the tray in the freezer and let the yogurt coins freeze for at least 4 hours or until completely solid.

Serve and Enjoy: Once frozen, remove the coins from the tray. If they stick, carefully peel them off the parchment paper. Optional: Garnish with additional raspberries, mint leaves, or lemon zest for a vibrant presentation. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.
