Frozen Lemon Yogurt Chia Drops

These delightful bites combine creamy Greek yogurt, zesty lemon, and nutrient-packed chia seeds for a tasty treat that’s both satisfying and healthy. Ingredients
  

1 cup plain Greek yogurt

1/4 cup honey or maple syrup (adjust to taste)

Zest of 1 lemon

1/4 cup freshly squeezed lemon juice

1/4 cup chia seeds

1/2 teaspoon vanilla extract

Pinch of salt

Optional toppings: crushed nuts, shredded coconut, or granola

Instructions
 

In a mixing bowl, combine the Greek yogurt, honey or maple syrup, lemon zest, lemon juice, vanilla extract, and a pinch of salt. Mix well until fully incorporated and smooth.

    Stir in the chia seeds, ensuring they are evenly distributed in the yogurt mixture.

      Cover the bowl and refrigerate for about 30 minutes. This allows the chia seeds to absorb some moisture, forming a thicker texture.

        Once chilled, line a baking sheet with parchment paper.

          Using a spoon or a small cookie scoop, drop spoonfuls of the yogurt chia mixture onto the prepared baking sheet, spacing them about an inch apart.

            Place the baking sheet in the freezer and freeze for at least 4 hours, or until the drops are completely solid.

              Once frozen, carefully remove the drops from the parchment paper and store them in an airtight container or a resealable bag in the freezer.

                When ready to enjoy, simply take a few out and allow them to soften slightly at room temperature for a couple of minutes for the best texture. Optional: sprinkle your favorite toppings on before serving.
