Frozen Peach Melba Popsicles

4 ripe peaches, pitted and chopped

1 cup fresh raspberries (or frozen, thawed)

1/2 cup honey or maple syrup (adjust based on sweetness preference)

1 cup Greek yogurt (vanilla or plain)

1 tablespoon lemon juice

1 teaspoon vanilla extract

Pinch of salt

Additional raspberries and peach slices for garnish (optional)

Instructions
 

Prepare the Peach Mixture: In a blender, combine the chopped peaches, half of the honey (or maple syrup), lemon juice, and a pinch of salt. Blend until smooth. If you prefer some texture, you can pulse the blender a few times instead of fully puréeing.

    Prepare the Raspberry Mixture: In another bowl or blender, combine the raspberries, the remaining honey, and vanilla extract. Blend until smooth. Again, you can pulse it for a chunkier texture if desired.

      Layer the Popsicles: Using a popsicle mold, start by pouring in the peach mixture, filling it about half full. Follow with a layer of Greek yogurt, filling just below the top. Lastly, spoon in the raspberry mixture, leaving some space at the top for expansion while freezing. You can gently swirl the layers with a skewer or knife if you want a marbled effect.

        Insert Sticks and Freeze: Place the popsicle sticks into the molds. Freeze for at least 4-6 hours or until completely solid.

          Unmold and Serve: To remove the popsicles, run warm water over the outside of the molds for a few seconds until they loosen. Gently pull the popsicles out and enjoy immediately! If desired, garnish with additional raspberries or peach slices.
