4 ripe peaches, peeled and diced

1 cup granulated sugar

1 cup water

2 tablespoons fresh lemon juice

A pinch of salt

Prepare the Peaches: Start by peeling the peaches and removing the pits. Cut the peaches into small, uniform pieces, ensuring they are ripe and sweet for the best flavor.

    Make the Simple Syrup: In a saucepan, combine the sugar and water over medium heat. Stir until the sugar has completely dissolved. Remove from heat and let it cool to room temperature.

      Blend the Mixture: In a blender, combine the diced peaches, cooled simple syrup, lemon juice, and a pinch of salt. Blend until you have a smooth and creamy mixture. Taste and adjust sweetness if necessary—add more sugar or lemon juice to suit your preferences.

        Chill the Mixture: Pour the blended peach mixture into a bowl and cover with plastic wrap. Refrigerate for at least 1-2 hours to chill thoroughly. This will enhance the flavors.

          Churn the Sorbet: If you have an ice cream maker, pour the chilled peach mixture into the machine and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency. This usually takes about 20-25 minutes.
