Ingredients

1 cup rolled oats

1/2 cup creamy peanut butter (or nut butter of choice)

1/4 cup honey or maple syrup

1/4 cup mini chocolate chips (dark or milk chocolate)

1/4 cup chopped nuts (such as almonds or walnuts)

1/4 tsp sea salt

1/2 tsp vanilla extract

Optional toppings: shredded coconut, dried fruit, or seeds

Instructions

Prepare Your Baking Sheet: Line a baking sheet or a large tray with parchment paper for easy removal after freezing.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, mini chocolate chips, and sea salt. Stir until evenly distributed.

Combine Wet Ingredients: In a separate bowl, mix the peanut butter, honey or maple syrup, and vanilla extract until smooth and creamy.

Combine Wet and Dry Ingredients: Pour the peanut butter mixture over the oat mixture. Use a spatula or wooden spoon to mix everything together until the oats are evenly coated and the mixture is sticky.

Form Clusters: Using your hands or a spoon, scoop small amounts of the mixture and shape them into clusters or balls. Place them onto the lined baking sheet, leaving a little space between each cluster.

Freeze: Once all the clusters are formed, place the baking sheet in the freezer for about 1-2 hours or until the clusters are completely firm.

Store: After freezing, transfer the clusters to an airtight container or a zip-top bag. Store in the freezer for up to a month for a quick and healthy snack.

Enjoy: Grab a few frozen clusters whenever you need a quick energy boost or sweet treat!
