2 cups fresh pineapple chunks (or frozen, thawed)

1 cup coconut milk (canned for creamier texture)

1/2 cup shredded unsweetened coconut

1/4 cup honey or maple syrup (adjust for sweetness)

1 tsp vanilla extract

1 tbsp lime juice

1/2 cup Greek yogurt (optional for creaminess)

Pinch of salt

Blend Ingredients: In a blender, combine the fresh pineapple chunks, coconut milk, shredded coconut, honey (or maple syrup), vanilla extract, lime juice, and a pinch of salt. If using Greek yogurt for extra creaminess, add it here as well.

    Blend Until Smooth: Blend the mixture on high until smooth and creamy. Taste it and adjust sweetness if needed by adding more honey or maple syrup.

      Prepare the Pan: Line a 9x5 inch loaf pan with parchment paper, leaving some overhang for easy removal.

        Pour Mixture Into Pan: Pour the blended mixture into the prepared loaf pan, smoothing it out with a spatula to create an even layer.

          Freeze: Cover the pan with plastic wrap or aluminum foil and place it in the freezer for at least 4 hours or until fully frozen.

            Cut into Bars: Once set, remove the frozen block from the pan using the parchment overhang. Cut into bars of your desired size.
