2 cups of fresh or frozen raspberries

1/2 cup of granulated sugar, divided

1 cup of heavy cream

1 teaspoon of vanilla extract

1/2 cup of cream cheese, softened

2 tablespoons of lemon juice

1/4 teaspoon of salt

Optional: Fresh mint leaves for garnish

Prepare the Raspberry Sauce: In a small saucepan, combine the raspberries and 1/4 cup of granulated sugar over medium heat. Cook for 5-7 minutes, stirring occasionally, until the raspberries break down. Remove from heat and let cool slightly. You can blend it for a smoother texture, if desired.

    Make the Cream Base: In a medium mixing bowl, beat the heavy cream with an electric mixer until soft peaks form. Gradually add in the remaining 1/4 cup of sugar and continue beating until stiff peaks form. Set aside.

      Combine Cream Cheese Mixture: In another bowl, combine the softened cream cheese, vanilla extract, lemon juice, and salt. Mix until smooth and creamy.

        Fold Mixtures Together: Gently fold the whipped cream into the cream cheese mixture until just combined, being careful not to deflate the cream.
