Once you have assembled your delicious mixture of Greek yogurt, fresh raspberries, and optional toppings, it's time to freeze the bark. Pour the yogurt mixture onto a parchment-lined baking sheet, spreading it evenly to ensure consistent thickness. This step is crucial as it determines how your bark will break apart later. Aim for a thickness of about half an inch for the best results.

Ingredients

2 cups plain Greek yogurt

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup fresh raspberries

1/2 cup granola (or your favorite nuts and seeds)

1/4 cup dark chocolate chips (optional, for drizzling)

Instructions

Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well mixed and creamy.

Line the Baking Sheet: Line a baking sheet (approximately 9x13 inches) with parchment paper, ensuring it fits snugly.

Spread the Yogurt: Pour the yogurt mixture onto the prepared baking sheet. Use a spatula to spread it evenly to about 1/4 inch thickness.

Add Toppings: Evenly distribute the fresh raspberries over the yogurt layer. Sprinkle the granola (or nuts and seeds) on top, pressing them gently into the yogurt to ensure they stick.

Optional Chocolate Drizzle: If using, melt the dark chocolate chips in the microwave in 20-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the yogurt bark using a spoon or a piping bag.

Freeze: Place the baking sheet in the freezer and freeze for about 4 hours, or until the yogurt is completely firm.

Break into Pieces: Once frozen, remove the yogurt bark from the freezer and peel off the parchment paper. Using your hands or a sharp knife, break the bark into pieces.

Serve and Enjoy: Serve immediately or store the pieces in an airtight container in the freezer for a refreshing snack anytime!
