Ingredients

2 cups fresh strawberries, hulled and chopped

1 cup plain Greek yogurt (or your favorite yogurt)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

A pinch of salt

Optional: 1 tablespoon lemon juice (to enhance flavors)

Instructions

Prepare the Strawberries: In a medium bowl, combine the chopped strawberries, honey (or maple syrup), and lemon juice. Use a fork or potato masher to lightly mash the strawberries, leaving some chunks for texture. Set aside.

Mix the Yogurt Base: In a separate bowl, whisk together the Greek yogurt, vanilla extract, and salt until smooth and creamy.

Layer the Mixture: In your chosen ice pop molds, start by adding a layer of the yogurt mixture, filling each mold about halfway. Then, spoon a layer of the mashed strawberry mixture on top of the yogurt, followed by another layer of yogurt to fill the molds completely.

Insert Sticks: If your molds require sticks, insert them as per the instructions. If not, ensure to leave a little space at the top for expansion.

Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until solid.

Release the Pops: When ready to enjoy, run the molds under warm water for a few seconds to help release the pops. Carefully pull them out and serve immediately.

Garnish (Optional): For a fun touch, dip the pops in melted dark chocolate and sprinkle with crushed nuts or shredded coconut before freezing for a few more minutes.
