Ingredients

2 cups Greek yogurt (plain or coconut-flavored)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup shredded coconut (sweetened or unsweetened)

1/2 cup almonds (roughly chopped, plus extra for topping)

1/4 cup unsweetened cocoa powder

1/4 cup dark chocolate chips (optional)

Pinch of sea salt

Instructions

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup if vegan), vanilla extract, and a pinch of sea salt. Stir until smooth and well blended.

Add Coconut and Almonds: Gently fold in the shredded coconut and chopped almonds into the yogurt mixture, ensuring an even distribution throughout the mix.

Combine the Chocolate: In a separate small bowl, mix the cocoa powder with the dark chocolate chips (if using). Add this chocolate mixture to the yogurt blend and fold until combined. This will give your squares a delightful chocolaty undertone.

Prepare the Pan: Line an 8x8 inch (or similar) square baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

Fill the Pan: Pour the yogurt mixture into the prepared baking dish, spreading it evenly with a spatula. Use the back of a spoon to smooth the top.

Freeze: Place the baking dish in the freezer for about 4-6 hours, or until the mixture is completely set and firm.

Cut into Squares: Once set, carefully lift the mixture out of the baking dish using the parchment paper overhang. Place it on a cutting board and cut into squares or bars.

Serve and Store: If desired, sprinkle a few extra chopped almonds on top for garnish. Serve immediately or store the squares in an airtight container in the freezer for up to 2 weeks for a quick sweet treat!
