Ingredients

2 cups plain Greek yogurt

1/4 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

2 medium apples, peeled, cored, and diced

1 teaspoon ground cinnamon

1/2 cup rolled oats

1/4 cup chopped nuts (walnuts or pecans)

A pinch of salt

Instructions

In a large mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Stir until well mixed and smooth.

In a separate bowl, toss the diced apples with ground cinnamon, ensuring each piece is coated evenly.

Fold the diced apples into the yogurt mixture. Add the rolled oats, chopped nuts, and a pinch of salt. Mix everything gently until well combined.

Line an 8x8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.

Pour the yogurt mixture into the prepared baking dish, spreading it out evenly with a spatula.

Cover the dish with plastic wrap or aluminum foil and place it in the freezer. Freeze for a minimum of 4–6 hours, or until fully set.

Once frozen, remove from the freezer and let it sit at room temperature for about 5 minutes to soften slightly.

Use the parchment paper overhang to lift the entire block of frozen yogurt out of the dish. Cut into bars of your desired size.

Serve immediately or store the bars in an airtight container in the freezer for up to 2 weeks. Enjoy your refreshing treat!
