Ingredients

2 cups plain Greek yogurt

1/2 cup honey or maple syrup (for a vegan option)

1 teaspoon vanilla extract

1 cup fresh blackberries (plus extra for garnish)

2 tablespoons lemon juice

1 tablespoon sugar (optional, depending on blackberry sweetness)

1/4 cup crushed graham crackers or granola (for a crunchy layer)

Instructions

Prepare the Blackberry Swirl: In a small saucepan, combine the fresh blackberries, lemon juice, and sugar (if desired). Heat over medium-low until the blackberries start to break down and release their juices, about 5-7 minutes. Stir occasionally. Once it reaches a beaded syrup consistency, remove from heat and let it cool completely.

Mix the Yogurt Base: In a large mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and well combined.

      Layering the Squares:

        - Line an 8x8 inch (or a similar size) baking dish with parchment paper, leaving some overhang for easy removal later.

          - Spoon half of the yogurt mixture into the bottom of the dish and spread it evenly.

            - Drizzle half of the blackberry sauce over the yogurt layer, and use a knife to gently swirl it in for a marbled effect.

              - Add the remaining yogurt mixture on top and smooth it out.

                - Finish by drizzling the remaining blackberry sauce on top and swirling again for decoration.

Add Crunch (Optional): If you want some crunch, sprinkle the crushed graham crackers or granola on top of the yogurt layer before you freeze it.

Freeze: Cover the dish with plastic wrap or aluminum foil and freeze for at least 4-6 hours, or until completely solid.

Serve: Once frozen, remove the dish from the freezer and let it sit at room temperature for about 5-10 minutes to soften slightly. Use the parchment overhang to lift the frozen yogurt block out of the dish. Cut into squares and garnish with additional blackberries before serving.

Store: Any leftovers can be stored in an airtight container in the freezer for up to 2 weeks.
